I know what you mean. I will try and explain my thinking:
For better or worse, this version of the Captain doesn't use a vibranium shield anymore, so I thought I'd take the focus off of that by downplaying the colorful iconography of it. Bucky has the old shield. This one is simply a very strong titanium alloy or something.
And the medieval knight look is very understandable-- I was thinking in that direction with the design. It bothered me that Captain America wears skin-tight scale mail as a costume. Even ultra-light scale mail wouldn't work like that. And, like our medieval forebears, the flexible armor only works so well. He still needs a helmet to avoid getting his brain pulped by a heavy impact.
